In diesem Rezept trifft unser Premium Bio-Kokosmus auf mediterrane Zutaten wie Portobello-Pilze, frischen Spinat und Kirschtomaten. Eine leckere Mahlzeit für die roh-vegane Küche.
Die Portobello-Pilze waschen und auf einem großen Teller anrichten.
Zur Zubereitung der Füllung werden die eingelegten Cashewnüsse, 50 ml Wasser, Salz und das Kokosmus in einen Mixer gegeben und zu einer gleichmäßigen Masse verarbeitet. Danach die Füllung mit einem Löffel in die Portobello-Pilze geben.
Die Kirschtomaten klein schneiden und auf die Cashew-Kokosmus-Füllung geben.
Für die Kräuterschicht werden die jungen Spinatblätter, das Korianderkraut und Salz im Mixer verarbeitet und auf den Kirschtomaten angerichtet. Mit etwas Pfeffer würzen und schon kann das Gericht serviert werden!
Variante: Wer eine leicht gegarte Variante haben möchten, kann die Pilze vor dem Befüllen für 5 Minuten im Backofen bei 180° Grad garen.
